01 / WHY

With only the method,
you can make only that one thing

In a workshop we cover more than the method: where the thing came from, how it was used in daily life, how earlier generations carried it forward.

And we start from “why this soybean, why this salt.” Once the reason is clear, you can rebuild it from what is in your own kitchen.

In the room, you can ask about the part you did not follow.
At home, you cannot.
So we are making it in a form you can go back over as many times as you need.

Miso and koji were made in home kitchens to begin with.
The method travelled hand to hand, that way.

02 / HOW

What we have decided

Which one it will be is not decided yet. These four are.

  1. A form that works for someone doing it for the first time
  2. So that you can do it again at home, on your own
  3. Always explaining why it is done that way
  4. Something you can go back over as many times as you need

There is nothing
we can hand you yet

We could have put up a page that just says “coming soon,” but that gives nothing to anyone who is waiting. So here is what we do know.

What we will make is what we have been doing in workshops ── fermentation, skincare, seasonal work by hand.
We will start with one of them.

The price and the date are not decided.
We do not want to write something undecided as though it were decided, so we are saying it plainly.

As things are settled, they will be added to this page.

WHO IT IS FOR

If you only want the method,
this is not for you

The method takes under ten minutes once you have it.
 What this course spends its time on is what comes before that ── why you choose that ingredient.

It suits you if

When can I watch?
The date is not decided. When it is, it will be said here first, and in the note below.
Can I watch it again?
It will be made in a form you can go back over. That is one of the four in 02.
How it is delivered ── where you watch it, and for how long ── is not decided. It will be written here when it is.
Do I need special tools?
The content is not decided, so we cannot say what will be needed yet.
We have always handed over more than the method: how to choose ingredients, and which tools to use. The course will be the same.
Which language?
Japanese first. English and Korean are not decided.
